Chocolates
(cook for 15 minutes, chill for an hour in the freezer):
- 50g dark chocolate (I use chocolate with 80% + cocoa bean content),
- ½ cup almond milk,
- 1 cup almond and/or coconut powder,
- 1 cup dates,
- ½ cup prunes,
- ½ cup cranberries,
- ½ lemon,
- ½ to ¾ cup fruit juice/mash (I use apple puree from a baked apple).
Pour the chocolate over the almond milk, heat through and stir well. Squeeze out the juice of a lemon. Mix all the ingredients in a domestic food processor, reserving 1/2 cup of the almond powder. From the mixture make balls of the desired size, roll them in almond or coconut powder and put in a covered container in the freezer for an hour. Store in the refrigerator for up to 3 days. The proportions of dates, prunes, cranberries and almond powder can be varied, depending on your preference.
