Spinach with shiitake mushrooms

(cooking time 15 minutes with preparation)

    3-5 tbsp olive oil,

    1 small chopped onion (or 2 shallots),
  • 3
    2-3 cloves finely chopped garlic,
  • 4
    125g chopped shiitake mushrooms,
  • 5
    Spices: pinch of salt, black pepper and turmeric.

Fry the onion (or 2 shallots) in olive oil over a low heat for 3 to 4 minutes, then add the garlic and shiitake mushrooms.

Fry on a medium heat for another 6-7 minutes, then add 100g spinach and spices for 1 minute, stirring until the spinach turns slightly soft, no more that 2-3 min. Serve as a main dish or as a side dish, or add to spaghetti or a soup.
